When I went there for the first time, I had just gotten back from a trip to Italy, eating at all these Michelin star places in Bologna, Modena, and Parma. That trip really opened my eyes up, like, 'Oh man, this isn't just pasta and lasagna anymore. It's totally different.'
So when I got to Flour + Water, I thought, 'There's no way that their food can be as good as what I ate on my trip.' I sat down and sure enough, it was as good as, if not better, than all the Michelin star places I'd eaten at in Italy.
My word of advice is that when you go you have to order at least three pasta dishes, because one is going to be good, one is going to be great and one is going to blow you away. You just don't know which of the three it'll be, and usually, it's the one that you're not sure you're going to like that turns out to be the best one."
