"Bows X Arrows is a cutting-edge cafe in that their food program is really restaurant-level quality plated food, and they have a hybrid model between being a bar at night and a cafe during the day.

It's in an off-the-beaten-path neighborhood of Vancouver, it's an old Vietnamese area with interesting walkable streets. That neighborhood is kind of one of those spots that if you read a city guide of Vancouver, you'd never go, but that's the part of town where all the new and exciting restaurants are popping up."

"With coffee, things are a bit more introspective. You're working with one product, you source it, it's very personal. We try and work with the same producers every year, and that's what I'm proud of. The continuity of working with the same producers, listening to their stresses and making modifications as we learn how to sell their product and their hard work."
